Summer in the City :: {Homemade Chocolate Covered Strawberry Ice Cream}

The hot days of Texas call for everything in the cold category. One of our favorites is homemade ice cream. There are so many flavors and combinations to try. Although I have very fond ice cream-making-memories of my sister and I rolling the coffee can back and forth across my mom's kitchen floor, {see what I am talking about here}, I have been lucky enough to use my Cuisinart ice cream & sorbet maker this summer. One of my favorite flavors at the frozen custard joint back home was 'Choco-Dip': Frozen custard + strawberries + hard chocolate. I did my best to re-create it and loved the results.

Ingredients

  • 1-1/2 cups whole milk
  • 3/4 cups granulated sugar
  • 2 cups heavy cream
  • 1 tsp. pure vanilla extract
  • pinch of salt
  • 1/3 c. semi-sweet chocolate chips melted with 2 T. heavy cream
  • 1/2 c. chopped fresh strawberries

Makes 1.5 quarts

Instructions

In a medium mixing bowl combine the milk and granulated sugar until the sugar is dissolved, about 1 to 2 minutes. Stir in the heavy cream, salt and vanilla. Turn the machine on; pour the mixture into freezer bowl, and let mix until thickened, about 20 to 25 minutes. The last few minutes of mixing, slowly drop the melted chocolate in by spoonfuls. Add strawberries and turn machine off. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.
