Raspberry & Cinnamon Mini Pies

It was Game 6 of the MLB National League Championship and we wanted to put something festive on our plates for a watch party. Using the color red was a must since we are St. Louis Cardinal fans. I made these tiny pies up on the fly and they were so tasty and super easy. I am no advocate for emotional eating, but these were comforting after a big loss!

  • 1 store bought puff pastry sheet
  • 16 frozen raspberries
  • 2 tsp. sugar
  • 1 tsp. cinnamon (I used Penzey's Vietnamese cinnamon)
  • Colored Sparkling sugar (optional)

Preheat oven to 350. Lay out thawed puff pastry sheet. Make 4 rows (4 in each row) of raspberries. Sprinkle with cinnamon and sugar. Roll up evenly and bake for 15-18 minutes. Using a pizza cutter, slice into pieces and sprinkle with sparkling sugar.
